Project One
We were approached in 2018 to re-concept and re-design a storied restaurant in an historic AAA 4-star rated hotel that had operated continuously under its existing identity for over 100 years. The resulting brasserie brought 250% growth in annual revenue and has been featured in Food & Wine, Eater, Forbes, and CBS Saturday Morning. It was named Best Hotel Restaurant by Historic Hotels of America and gained a spot on USA Today’s “Top Ten Hotel Restaurants in America.” This project is situated in an historic property and required complex approvals from numerous historical authorities and review boards.
